Bala’s Chinese Dip

For me, good friends and good food is all I need to chase the stress away. I so look forward to our Girls-Night-In after a hectic schedule with family and work. Our first Girls-Night-In was organized by our common friend Minal. The rules are simple – whoever has the house to themselves (husband and kid free), calls everyone together and Girls-Night-In commences.
We all bring a dish and of course, a healthy dose of the latest gossip! Each of us are from a different part of the world, now living in Dubai, with an array of personalities and a whole lot of gumption. You can imagine that conversations can get hot and heavy (even without drinking) as we immerse ourselves in the politics of the day, everyone eager to solve the world’s problems. There’s no judgement just laughter and fun.

Here’s a recipe I brought to the last Girls-Night-In. It’s quick, easy, and was a hit with the ladies (all with very discerning palettes and a love for food). I adapted it slightly from Joyful Scribbling’s Sweet & Sour Chinese Dip. Enjoy!
12oz tub of cream cheese
1 grated medium-size carrot
⅓ cup chopped peanuts
¼ spring onions
2 tbsp soya sauce
1 tbsp chopped cilantro plus some for garnishing
1 tsp ground garlic
1 tsp red chili flakes
1 bottle sweet chili sauce
Find a platter you would like to serve this on and spread cream cheese evenly on platter.
In a medium-sized bowl, mix together carrots, peanuts, spring onions, soya sauce, cilantro, garlic, and chili flakes.
Once combined well, spread evenly over cream cheese. Then pour sweet chili sauce to taste. Garnish with chopped cilantro.
Serve with fried wontons or crackers.
